Chả Cá Madam

Chả Cá Madam — the cuisine and colors of heritage. Why do Korean, Chinese, and Japanese meals always evoke elaborate spreads where each dish is its own color and character? Those presentations reflect the grandeur of royal banquets, where food was both nourishment and art — a mirror of culture and history. For Vietnamese cuisine, the answer is chả cá: a dish celebrated not only for its flavor, but for how it is enjoyed — layers of spice, fragrance, and color creating a harmonious whole, both folk and noble. When creating Madam Tư Hồng’s ca canh and chả cá, we thought not only about taste but about recreating a fragment of national heritage beauty. The vibrant red of horn pepper, the golden hue of chả cá, the fresh green of spring onions and water spinach — these three colors don’t just make the dish beautiful; they echo the primary tones of Huế imperial architecture. A plate that is not just a meal, but a slice of heritage where cuisine, color, and history come together.
