Madam Tư Hồng, a bold and visionary woman of late 19th-century Hanoi, discovered a unique connection to “Chả Cá.” At a banquet hosted by a long-established and esteemed family in Hanoi, she was captivated by the distinct way it was enjoyed: “Warm chả cá paired with shrimp paste, roasted peanuts, scallions, and dill – a refined combination, rich in flavor, and imbued with a regal touch as if made for royalty.”

Inspired by this harmony, she nurtured a desire to create a chả cá recipe with her own signature. However, this journey was not rushed, much like Jiang Ziya waiting for the right time, Madam Tư Hồng patiently observed, studied, and prepared. She traveled across Vietnam’s three regions, gathering and refining the essence of their flavors.

Each region offered its own unique inspiration: the boldness of Central Vietnam’s sauces, the freshness of Southern herbs, and the intricate techniques of Northern cuisine. When the moment was right, she blended these elements to craft a chả cá that preserved its traditional essence while bearing the distinctive touch of Madam Tư Hồng.

Chả Cá is not merely a dish; it is a story of cultural fusion, enduring patience, and an unwavering passion for Vietnamese gastronomy.
